Step 1
Peel and cut the potatoes into thin strips.
Step 2
Rinse the enoki mushrooms and cut off the base. Separate the enoki into smaller bundles.
Step 3
Mince the garlic and ginger.
Step 4
Heat olive oil in a pan over medium heat. Add the minced garlic and ginger, and cook for 1 minute until fragrant.
Step 5
Add the potato strips to the pan and stir-fry for 8-10 minutes until they start to brown and are cooked through.
Step 6
Add the enoki mushrooms to the pan and continue to stir-fry for 2-3 minutes until the mushrooms are tender.
Step 7
Pour soy sauce over the stir-fry and stir to combine. Season with salt and black pepper to taste.
Step 8
