Slice the chicken breast and portobello mushrooms into thin strips.

In a small bowl, mix the gluten-free soy sauce, honey, and rice vinegar.

In a large skillet or wok, heat the vegetable oil over high heat.

Add the minced garlic and ginger to the skillet and stir-fry for 30 seconds.

Add the portobello mushrooms to the skillet and stir-fry for an additional 2-3 minutes.

Pour the sauce mixture over the chicken and mushrooms, stirring to coat evenly.

Continue to stir-fry for another minute, allowing the sauce to thicken slightly.
