Step 1
In a bowl, beat the eggs with a pinch of salt. Heat a wok or large skillet over medium-high heat and add 1 tbsp of oil. Pour in the beaten eggs, swirling the pan to create a thin layer of egg. Cook for 1 minute, then flip and cook for another 30 seconds. Transfer the egg to a cutting board and cut into small pieces.
Step 2
Return the wok to medium-high heat and add 2 tbsp of oil. Add the shrimp and stir-fry until pink. Push the shrimp to the side of the wok, add another tablespoon of oil, and add the carrots. Stir-fry for 2 minutes, then add the peas and continue to stir-fry for 1 more minute.
Step 3
Increase the heat to high and add the rice, breaking up any clumps. Stir-fry for 2 minutes, then add the light soy sauce and oyster sauce. Stir to combine.
Step 4
Return the egg to the wok, along with the green onions and sesame oil. Stir-fry for another minute, then taste and adjust seasoning with salt if needed.
