Preheat the oven to 200°C (400°F).

Clean the pigeons and pat dry with paper towels.

Rub the pigeons with five-spice powder, salt, and soy sauce. Let it marinate for 30 minutes.

In a small bowl, mix honey, ginger, and garlic. Stuff the pigeons with this mixture and some green onions.

Truss the pigeons and place them on a rack in a roasting pan. Brush with Shaoxing wine.
Step 6
Roast in the preheated oven for about 30-35 minutes, basting occasionally, until the skin is crispy and the meat is cooked through.
Step 7
Let the pigeons rest for a few minutes before serving. Enjoy with steamed rice and stir-fried vegetables.
