Why it suits you: Even as Minor Snow cools, damp-heat can linger; dace drains damp and gai lan clears heat in a light broth.

Method

Prep 10 min · Cook 10 min
  1. 1Beat the fish paste with salt and cornflour until sticky, then shape into balls.
  2. 2Soak the vermicelli and cut the gai lan into lengths.
  3. 3Boil the stock and cook the fishballs for 4 minutes until they float.
  4. 4Add the vermicelli and gai lan for 2 minutes and finish with pepper.

Cautions

  • Keep the fishballs small so they cook through.

Chef's tips

  • Wet your hands to shape the fishballs without sticking.

The TCM view

Dace is sweet and neutral, strengthening the spleen and draining water; gai lan is cool, clearing heat.

Seasonal principle

The weather turns colder. Focus on warming the Yang energy and nourishing the Kidneys with nutrient-dense foods. Keep your head and feet particularly warm, as these are areas where cold easily enters. Consume warm soups and stews to maintain core body temperature.
