Why it suits you: White Dew brings hot days and cooler nights, so a balanced body simply follows the season: snow fungus moistens the lungs and replenishes fluids, while sweet potato and red dates gently support digestion — neither cold nor drying.
Method
Prep 10 min · Cook 35 min- 1Soak the snow fungus in water for 20 minutes until soft, snip off the hard yellow base and tear into small florets.
- 2Peel the sweet potato, cut into chunks and keep in water so it doesn't darken. Pit the red dates.
- 3Bring the water to the boil, add the snow fungus, dates and ginger, and simmer over medium-low heat for 20 minutes until the fungus turns silky.
- 4Add the sweet potato and simmer for 15 minutes more, until a chopstick slides in, then stir in the sugar until dissolved.
- 5Drink warm, or pour into a flask for the office and sip it through the afternoon.
Cautions
- Diabetic or watching your blood sugar? Leave out the sugar and count the sweet potato as your carbohydrate.
Chef's tips
- Soak snow fungus for 20–30 minutes only — never overnight, as soaked fungus can spoil.
The TCM view
Snow fungus is sweet, bland and neutral; it nourishes yin, moistens the lungs and replenishes fluids. Sweet potato is sweet and neutral and supports digestion and qi; red dates (sweet, warm) and ginger (pungent, warm) gently warm the stomach. The bowl eases dryness without chilling.
