Why it suits you: Balanced types only need to keep yin and yang in balance at the Spring Equinox, without special tonics. Soybean sprouts strengthen the spleen and clear without chilling, and with ginger and hot broth the bowl is neither too warm nor too cool.
Method
Prep 10 min · Cook 10 min- 1Toss the pork with the soy sauce and cornflour for 5 minutes. Boil the vermicelli for 3 minutes and divide between bowls.
- 2Bring the water and ginger to the boil, add the sprouts for 3 minutes, then the pork until cooked.
- 3Pour the soup over the vermicelli and scatter with spring onion.
Chef's tips
- Pinch off the sprout roots for a crisper bite.
The TCM view
Soybean sprouts are sweet and cool, clearing heat, draining damp and strengthening the spleen. Pork is sweet, salty and neutral and moistens; ginger warms the stomach. One cool, one warm: just right for the equinox balance.
