- Serves 2
- Stir-fry
- Easy
Why it suits you: Qi-stagnant types often feel tight-chested, sigh and have an up-and-down appetite as liver qi peaks at the Spring Equinox. Onion moves qi, peas harmonise the middle and help qi descend, and egg nourishes blood and calms: an easy breakfast that helps qi flow.
Method
Prep 5 min · Cook 8 min- 1Beat the eggs with the milk and salt. Toast the bread.
- 2Cook the onion in the oil over medium heat for 3 minutes until soft and sweet, then add the peas for 2 minutes.
- 3Turn the heat down, pour in the eggs and stir gently until just half-set. Pile onto the toast and add black pepper.
Chef's tips
- Take the eggs off the heat when half-set; the residual heat finishes them softly.
The TCM view
Onion is pungent, sweet and warm, moving qi and settling the stomach. Peas are sweet and neutral, harmonising the middle and helping qi descend; egg nourishes blood and calms the mind; wholemeal bread nourishes the stomach.
