Why it suits you: Yin-deficient types get a dry mouth and light sleep when the Spring Equinox turns damp with flashes of heat. Dried scallop nourishes yin and the kidneys, cool egg white clears heat and moistens, and congee soothes the stomach without chilling.
Method
Prep 10 min · Cook 15 min- 1The night before, soak the scallops in a little water, then put them with their soaking water, the rice, ginger and water into a rice cooker on a delayed congee setting.
- 2In the morning lift out the scallops, shred them and simmer them in the congee for 5 minutes.
- 3Just before turning off the heat, pour in the egg whites slowly while stirring to form soft ribbons, then season and add spring onion.
Chef's tips
- Save the yolks for steamed egg or fried rice.
The TCM view
Dried scallop is sweet, salty and neutral, nourishing yin and the kidneys and settling the stomach. Egg white is sweet and cool, clearing heat and moistening dryness; rice nourishes the stomach and fluids.
