Why it suits you: Phlegm-damp types feel heavy, bloated and phlegmy in the damp equinox weather. Mangetout harmonises the middle and drains damp, baby corn strengthens the spleen and drains water, and lean chicken nourishes without heaviness.

Method

Prep 15 min · Cook 10 min
  1. 1Cut the chicken into strips and marinate with half the soy sauce and the cornflour for 10 minutes.
  2. 2Blanch the baby corn and carrot for 2 minutes and drain.
  3. 3Fry the ginger and garlic in the oil, stir-fry the chicken until white, add the mangetout, baby corn and carrot for 2 minutes, then the rest of the soy sauce.

Chef's tips

  • Pull the strings off both sides of the mangetout so they are not tough.

The TCM view

Mangetout is sweet and neutral, harmonising the middle, helping qi descend and promoting urination. Corn is sweet and neutral and drains damp; chicken is sweet and warm and supports qi; carrot strengthens the spleen.
