Why it suits you: Qi-deficient types tire easily and eat little around the Spring Equinox. Broad beans strengthen the spleen and qi, prawns are warming and supportive and egg nourishes blood; all three are easy to digest, so dinner builds qi without sitting heavy.
Method
Prep 15 min · Cook 8 min- 1Toss the prawns with a little salt and the cornflour. Boil the broad beans for 3 minutes and drain.
- 2Beat the eggs with a little salt and the spring onion.
- 3Stir-fry the prawns in the oil until pink, add the beans, pour in the eggs and stir gently over low heat until just half-set.
Cautions
- Never eat broad beans if you have G6PD deficiency (favism); avoid if allergic to shellfish.
Chef's tips
- Slip the beans out of their inner skins for the creamiest texture.
The TCM view
Broad beans are sweet and neutral, strengthening the spleen, supporting qi and draining damp. Prawns are sweet and warm and support kidney qi; egg is sweet and neutral and nourishes yin and blood.
