- Easy
Why it suits you: Yin-deficient types are prone to rising deficiency heat, a dry mouth and light sleep as yang grows after the Spring Equinox. Soy milk moistens, egg nourishes yin and blood and goji supports the liver and kidneys, in a soft custard that soothes at any time of day.
Method
Prep 5 min · Cook 15 min- 1Warm the soy milk with the rock sugar until it dissolves, then cool until just warm.
- 2Beat the eggs, slowly stir in the soy milk, sieve twice, skim off any bubbles and pour into heatproof bowls.
- 3Cover with a plate or cling film and steam over low heat for 12 minutes once the water boils. Add the goji and steam for 1 more minute.
Chef's tips
- Keep the heat low; fierce steaming leaves the surface pitted with holes.
The TCM view
Soy milk is sweet and neutral, tonifying and moistening dryness. Egg is sweet and neutral and nourishes yin and blood; goji nourishes the liver and kidneys and rock sugar generates fluids. Together they nourish yin and ease dryness.
