Why it suits you: Yang-deficient people feel the cold most at Major Cold. Cured meats are warming and a hot claypot warms the stomach.

Method

Prep 20 min · Cook 30 min
  1. 1Rinse and soak the rice for 30 minutes, then drain.
  2. 2Oil the claypot, add rice and water, bring to the boil, then lower the heat.
  3. 3When small holes appear, lay over the sliced sausages and ginger, cover and cook for 15 minutes.
  4. 4Drizzle oil round the edge for 3 minutes to crisp the base, add sweet soy and serve with choi sum.

Cautions

  • Cured meats are salty and fatty — once or twice a month.

Chef's tips

  • Oil round the edge gives a crisp crust.

The TCM view

Chinese sausage is sweet, salty and warm; liver sausage nourishes blood; ginger disperses cold; rice supports the middle.

Seasonal principle

The last term of the year. Protect against extreme cold while preparing the body for the coming Spring. Transition from heavy, greasy tonics to more balanced, gentle nourishment. Start incorporating slightly pungent foods to help the body's energy begin its upward movement for spring.
