Why it suits you: Yang Deficiency means feeling the cold, and Major Heat often means hours in air-conditioning plus cold drinks, chilling digestion further. A hot bowl of corn soup with ginger and pepper warms the middle, and egg adds easy-to-digest protein.
Method
Prep 10 min · Cook 15 min- 1Cut the kernels off the cobs. Blend half the kernels with 200 ml water until smooth; without a blender, chop them finely.
- 2Bring the purée, the remaining kernels and 400 ml water to the boil, then simmer on medium-low for 10 minutes.
- 3Stir the cornflour mix and pour it in slowly, stirring, until lightly thickened. Beat the egg, drizzle it in a circle, then turn off the heat.
- 4Season with ginger juice, salt and a little white pepper, scatter over the spring onion and eat hot.
Chef's tips
- Simmer the bare cobs in the soup and lift them out at the end — the broth tastes sweeter.
- For ginger juice, grate old ginger and press the pulp with a spoon, or use a garlic press.
The TCM view
Sweetcorn is sweet and neutral; it settles the stomach and gently drains damp. Egg is sweet and neutral and nourishes yin and blood. Ginger juice is pungent and warm and dispels cold; a little white pepper, pungent and hot, warms the stomach. Neutral ingredients with warming seasoning heat you through without drying you out in summer.
