Why it suits you: Hotpot season leaves damp-heat types with a dry mouth, sore throat and poor digestion. Daikon clears heat and stagnation and honey soothes.

Method

Prep 10 min · Cook 20 min
  1. 1Peel and slice the daikon.
  2. 2Bring to the boil with the water and ginger, then simmer for 20 minutes.
  3. 3Strain and let it cool until just warm.
  4. 4Stir in the honey.

Cautions

  • Add honey only once the drink is warm, not hot.

Chef's tips

  • Eat the daikon slices with a little soy sauce.

The TCM view

Daikon is pungent, sweet and cool, clearing heat and aiding digestion; honey moistens.
