Why it suits you: Qi-stagnant people often feel down, tight in the chest and prone to sighing, and the endless drizzle of Grain Rain makes it worse. Thai basil's pungent aroma moves qi and blood and egg nourishes blood and calms the mind — a fragrant breakfast to start the day on a better note.
Method
Prep 10 min · Cook 8 min- 1Pick and chop the basil leaves. Beat the eggs with the milk, salt and pepper, then stir in the basil and spring onion.
- 2Heat the oil in a non-stick pan over medium-low heat, pour in the eggs, cover and cook for 3 minutes until the top sets, then flip and cook for 1 minute more.
- 3Toast the bread. Halve the omelette and sandwich it in the toast with the lettuce, then cut diagonally.
Chef's tips
- Chop the basil at the last minute and add it straight to the eggs so it keeps its fragrance.
The TCM view
Thai basil is pungent and warm, moving qi and blood and dispelling wind and damp. Egg is sweet and neutral, nourishing yin and blood and calming the mind. Spring onion is pungent and warm, freeing yang and moving qi. Wholemeal bread is sweet and neutral, nourishing the heart and spleen. Fragrant, dispersing herbs paired with a gentle tonic help qi flow freely.
