Silky steamed egg with shiitake and pork mince
The taste of home: steamed egg with shiitake and minced pork — silky, easy to digest and, with choi sum and rice, a complete dinner.
- 30 min
- Serves 2
- Steam
- Easy
Why it suits you: Qi-deficient people have a weak digestion, and Grain Rain's damp leaves them even less hungry and easily bloated. Steamed egg is silky and easy to digest, shiitake builds qi and strengthens the spleen, and the pork nourishes — light but satisfying, and it won't sit heavy at dinner.
Method
Prep 15 min · Cook 15 min- 1Mix the pork with 1 tsp of the soy sauce, the cornflour and the diced mushrooms, then spread it over the base of a deep plate.
- 2Beat the eggs with the salt and slowly stir in the warm water — about 1½ times the volume of egg — then strain over the pork.
- 3Cover with another plate or cling film and steam over medium-low heat for 12 minutes, until the egg is set and the pork cooked through.
- 4Blanch the choi sum. Drizzle the egg with the remaining soy sauce and the sesame oil, scatter with spring onion and serve with the choi sum and rice.
Chef's tips
- Use warm, not cold, water for the silkiest egg. Steam covered on medium-low heat so the surface doesn't pit.
The TCM view
Egg is sweet and neutral, nourishing yin and blood and supporting digestion. Shiitake is sweet and neutral, building qi and strengthening the spleen. Pork is sweet, salty and neutral and nourishing; choi sum is sweet and neutral and aids digestion. Gentle and neutral, it tonifies without clogging — ideal for a weak digestion in the evening.
