Why it suits you: Balanced types simply follow the season. As Cold Dew dries the air, lotus root and chicken gently support digestion and qi, and with wholemeal bread and lettuce you get protein, fibre and carbohydrate in balance — filling without being greasy.
Method
Prep 15 min · Cook 8 min- 1The night before, mix the lotus root, chicken, soy sauce, cornflour, pepper and 1 tbsp water until sticky, shape into 4 patties and refrigerate.
- 2In the morning, pan-fry in a little oil over medium-low heat for 3–4 minutes a side, until golden and cooked through with no pink in the middle.
- 3Toast the bread, fill with lettuce and a patty, and cut in half.
Chef's tips
- Make a big batch and freeze the patties; move one to the fridge the night before.
The TCM view
Cooked lotus root turns sweet and warm, strengthening digestion and nourishing blood; chicken is sweet and warm and builds qi; wholemeal bread is sweet and neutral. Pan-fried in very little oil, it stays balanced as Cold Dew mornings turn cooler.
