Why it suits you: Phlegm-Dampness brings a heavy body and phlegm. Daikon moves qi downwards and resolves phlegm, with savoury dried shrimp and egg; thin pancakes in little oil make a clean, light breakfast for dry Cold Dew mornings.

Method

Prep 15 min · Cook 8 min
  1. 1Soak the dried shrimp for 10 minutes and chop. Toss the daikon with a pinch of salt for 5 minutes, then squeeze dry (you can do this the night before).
  2. 2Beat the eggs and mix in the daikon, shrimp, flour, spring onion and pepper.
  3. 3Brush a non-stick pan with oil and spoon in the batter over medium heat; cook for 2 minutes a side until golden.

Cautions

  • Allergic to shellfish? Swap the dried shrimp for diced shiitake.

Chef's tips

  • Squeeze the daikon really dry or the pancakes will fall apart.

The TCM view

Daikon is pungent, sweet and cool and resolves phlegm and food stagnation; dried shrimp is sweet and warm and wakes the appetite, balancing the daikon's coolness; egg is sweet and neutral and nourishes blood. Little oil and flour clear phlegm without straining digestion.

Seasonal principle

The weather turns cold. Focus on nourishing Yin and protecting the body from cold. Warm, moistening foods are best. Soak your feet in warm water before bed to promote circulation and improve sleep quality. Avoid exposing your ankles and neck to the cold wind.
