Why it suits you: Balanced types simply follow the Start of Spring principle of nourishing the liver and lifting yang. Spring pancakes are the traditional 'bite of spring', and pungent, warming yellow chives help yang qi rise alongside gently nourishing egg.

Method

Prep 10 min · Cook 8 min
  1. 1Beat the eggs with the salt. Cut the chives into lengths and shred the carrot.
  2. 2Stir-fry the carrot in hot oil for 1 minute, pour in the egg and stir until half set, then toss in the chives and take off the heat.
  3. 3Steam the wrappers for 2 minutes until soft, then roll them around the egg filling.

Chef's tips

  • Steam the wrappers the night before and chill them; 30 seconds in the microwave softens them again.

The TCM view

Yellow chives are pungent and warm, warming the middle and moving qi to support spring's rising yang. Egg is sweet and neutral and nourishes blood and yin; carrot is sweet and neutral and strengthens the spleen. Pungent with sweet suits the spring rule of 'less sour, more sweet'.

Seasonal principle

Spring is the time of the Liver. Focus on gentle movement and eating foods that help the Liver Qi rise. Avoid heavy, greasy foods that can stagnate Qi. It is important to dress warmly to protect against the lingering winter cold, especially around the neck and joints. Engage in light stretching exercises to promote the smooth flow of Qi and blood throughout the body.
