Why it suits you: Special, allergy-prone constitutions do best with fresh, simple food and a short ingredient list, and Liqiu's lingering muggy heat makes rashes and itching more likely. Sweetcorn supports the spleen and drains damp and is one of the least allergenic grains; grass carp is tender and warms the stomach, far gentler than shellfish; and congee is the easiest breakfast to digest.
Method
Prep 15 min · Cook 45 min- 1Rinse the rice and mix with the oil and a little salt; leave for 15 minutes. Cut the kernels off the corn, keeping the cobs.
- 2Bring the water and corn cobs to the boil, add the rice and boil for 10 minutes, then simmer for 30 minutes until creamy. Remove the cobs, add the kernels and cook for 5 minutes.
- 3Meanwhile, gently toss the fish with a pinch of salt, the cornflour and soy sauce and leave for 10 minutes.
- 4Bring the congee back to the boil, add the fish and ginger and stir gently. As soon as it bubbles, turn off the heat and leave for 1 minute to cook through. Scatter over the spring onion.
Cautions
- Avoid if you are allergic to fish, and watch for small bones in grass carp.
Chef's tips
- Simmering the corn cobs in the congee makes it naturally sweeter; ask the fishmonger to bone the fillet so it's safe for children.
The TCM view
Sweetcorn is sweet and neutral, regulating the middle, whetting the appetite and draining damp. Grass carp is sweet and warm, warming the stomach and harmonising the middle; rice is sweet and neutral, boosting qi and strengthening the spleen; ginger settles the stomach and removes fishiness. Gently nourishing and balanced, it strengthens the spleen without adding damp or heat — a simple early-autumn breakfast for special constitutions.
