Why it suits you: A balanced constitution simply follows the season. Autumn Equinox is the peak of autumn dryness, and sesame, honey and pear are its classic moistening foods; with toast, eggs and fruit it is a balanced plate in ten minutes.
Method
Prep 10 min · Cook 10 min- 1Put the eggs in cold water, bring to the boil over high heat, then cook on medium for 7–8 minutes. Cool in cold water for 1 minute and peel.
- 2Stir the sesame paste with the warm water and honey until smooth. Wash the pear, core it and slice it with the skin on.
- 3Toast the bread in a toaster, or in the air fryer at 180°C for 3–4 minutes, until golden and crisp.
- 4Spread the sesame honey on the hot toast, sprinkle with sesame and serve with the eggs and pear slices.
Chef's tips
- Start the day with a glass of warm honey water before breakfast — it soothes the throat and helps keep you regular.
- Choose unsweetened sesame paste and stir the oil on top back in before using, so it spreads smoothly.
The TCM view
Sesame is sweet and neutral, moistens the intestines and supports the liver and kidneys; honey is sweet and neutral and moistens the lungs and bowels; Asian pear is sweet and cool, clears heat and generates fluids. Eggs nourish yin and blood and wholemeal bread supports digestion. Neither cold nor drying — in step with the equinox balance of yin and yang.
