Why it suits you: Blood Stasis needs gentle warmth and nothing cold. Onion is pungent and warm and moves qi and blood, beef builds qi and blood, and a dash of black vinegar helps circulation. As Frost's Descent mornings cool, a hot noodle soup warms without drying.
Method
Prep 15 min · Cook 15 min- 1Toss the beef with 1 tsp soy sauce, the cornflour and 1 tbsp water and leave for 10 minutes. Soak the vermicelli in warm water until soft.
- 2Heat the oil in a wok and fry the ginger and onion over medium heat for about 3 minutes until lightly golden. Add the water and carrot, bring to the boil and simmer for 8 minutes.
- 3Add the vermicelli for 1 minute, season with the rest of the soy sauce, then lift the noodles into bowls.
- 4Bring the soup back to the boil, stir in the beef and turn off the heat as soon as it changes colour. Pour over the noodles and add a dash of black vinegar.
Chef's tips
- Slice the beef thinly across the grain and turn off the heat as soon as it changes colour so it stays tender.
