Why it suits you: Balanced types simply eat with the season. Frost's Descent is dry: apple generates fluids and honey moistens, while egg and milk add protein. Fried in a little butter over low heat, it is fragrant without being heating.
Method
Prep 10 min · Cook 12 min- 1Beat the eggs with the milk and a pinch of salt. Core the apple and slice it thinly.
- 2Halve each slice of bread and dip both sides in the egg for about 10 seconds, so it soaks up the egg without falling apart.
- 3Melt half the butter in a non-stick pan over low heat and fry the bread for 2–3 minutes a side until golden. Plate it.
- 4Add the rest of the butter to the pan and fry the apple over medium heat for 3 minutes until soft and lightly browned, then toss with 1 tbsp honey.
- 5Spoon the apple over the toast, drizzle with a little more honey, dust with cinnamon and eat hot.
Cautions
- Honey and bread both add sugar — if your blood sugar runs high, halve the honey and use wholemeal bread.
Chef's tips
- Choose a crisp, slightly tart apple such as Fuji or Granny Smith so it holds its shape in the pan.
The TCM view
Apple is sweet, sour and cool, generating fluids and waking the appetite; honey is sweet and neutral, moistening the lungs and bowels; egg and milk are sweet and neutral and nourish yin and blood. A pinch of warm, pungent cinnamon offsets the apple's coolness, keeping the dish balanced.
