Why it suits you: Damp-Heat brings a bitter taste and breakouts and calls for light, non-greasy food. Jicama and celery clear heat and generate fluids, sole is neutral and easy to digest, and brown rice keeps you full — fresh and not heating, even in dry Frost's Descent.

Method

Prep 15 min · Cook 10 min
  1. 1Pat the sole dry and toss with ½ tbsp soy sauce and the cornflour. Leave for 5 minutes.
  2. 2Heat ½ tbsp oil over medium heat and fry the fish until golden on both sides. Set aside.
  3. 3Add the rest of the oil and fry the garlic and ginger until fragrant. Stir-fry the jicama, celery and carrot over high heat for 3 minutes with a splash of water.
  4. 4Return the fish, add the rest of the soy sauce and toss gently. Serve with brown rice. For a lunchbox, cook it the night before and cover it well before reheating.

Chef's tips

  • Peel the jicama thoroughly. It can even be eaten raw, so stop cooking while it is still crisp.

The TCM view

Jicama is sweet and cool, clearing heat, generating fluids and moistening; celery is sweet, bitter and cool, clearing heat, calming the liver and draining damp; sole is sweet and neutral and builds spleen qi; brown rice strengthens digestion. Sweet, cool and fresh — it clears heat and damp without upsetting the stomach.
