Why it suits you: Yang Deficiency means feeling the cold, with chilly hands and feet. Prawns warm the kidneys, ginger warms the middle and chases cold, and yam supports the spleen and kidneys — a piping-hot ginger fried rice that warms you up as Frost's Descent cools.
Method
Prep 15 min · Cook 10 min- 1Pat the prawns dry and toss with a little white pepper. Peel and finely dice the yam. Beat the eggs.
- 2Heat ½ tbsp oil and gently fry the ginger until lightly golden and fragrant. Add the yam for 2 minutes, then the prawns until they turn pink. Set aside.
- 3Add the rest of the oil, pour in the eggs and, before they fully set, add the rice. Stir-fry over high heat until the grains separate.
- 4Return the prawns and yam, add the soy sauce and spring onion, toss and serve.
Cautions
- Skip this if you are allergic to prawns or other shellfish.
Chef's tips
- Day-old rice won't clump. For a lunchbox, fry it a little drier and sprinkle with water before reheating.
The TCM view
Prawn is sweet and warm and supports kidney yang; Chinese yam is sweet and neutral and supports the spleen, lungs and kidneys; fresh ginger is pungent and warm and dispels cold from the middle; egg is sweet and neutral and nourishes blood. Ginger and prawn warm the yang while yam steadies the spleen and kidneys — warming, not drying.
