Why it suits you: Yin Deficiency brings a dry mouth, restlessness and light sleep. In dry Frost's Descent, sea bass strengthens the spleen and nourishes yin, yam nourishes the lungs, and fresh lily bulb moistens the lungs and calms the mind — steamed with little oil, it is moistening, not heating.
Method
Prep 15 min · Cook 12 min- 1Pat the fish dry and cut it into large pieces. Wearing gloves, peel and slice the yam and lay it on a plate.
- 2Put the fish on the yam, top with the ginger and arrange the lily petals and goji berries around it.
- 3Steam over high heat for 7–8 minutes once the water boils, until the fish turns white and a chopstick slides in easily.
- 4Pour off excess liquid, top with spring onion, drizzle with the soy sauce and a little smoking-hot oil, and serve with rice.
Chef's tips
- Adjust the steaming time to the fillet's thickness: about 4 minutes per centimetre.
