Why it suits you: Yin-deficient types get a dry mouth in winter. Fig and apricot kernels both moisten and generate fluids, so this light congee is soothing without being heating.

Method

Prep 10 min · Cook 35 min
  1. 1Cut the figs open and rinse the apricot kernels.
  2. 2Boil the rice in the water, then simmer for 20 minutes.
  3. 3Add the figs and kernels and simmer for 10 more minutes.
  4. 4Dissolve the rock sugar and eat the congee warm, not boiling hot.

Cautions

  • Do not increase the apricot kernels — 8 g is enough — and eat less if pregnant.

Chef's tips

  • Cut the dried figs open so they flavour the congee.

The TCM view

Fig is sweet and neutral, moistening the lungs and generating fluids; apricot kernels are sweet and neutral, moistening the lungs; rice strengthens the spleen. It suits yin-deficient types at Minor Cold.

Seasonal principle

One of the coldest periods. Focus on warming the Kidneys and strengthening the Spleen to maintain energy. Consume hearty, mixed-grain porridges (like Laba congee) to provide sustained warmth and nutrition. Avoid cold drinks and raw foods entirely during this deep freeze.
