Why it suits you: In Minor Snow, soft rice rolls suit a qi-deficient constitution — gentle on the stomach with a little meat for strength.

Method

Prep 15 min · Cook 10 min
  1. 1Whisk the rice flour, cornflour and water into a batter and add the oil.
  2. 2Dice the char siu and slice the spring onion.
  3. 3Oil a flat tin, pour in a thin layer of batter, scatter over char siu and steam on high for 2 minutes.
  4. 4Roll up with a scraper, repeat with the remaining batter, then add soy sauce and spring onion.

Cautions

  • Char siu is sweet, so eat sparingly with diabetes.

Chef's tips

  • Keep the batter thin for the silkiest rolls.

The TCM view

Rice is sweet and neutral, strengthening the spleen and qi; pork is sweet and neutral, tonifying weakness.

Seasonal principle

The weather turns colder. Focus on warming the Yang energy and nourishing the Kidneys with nutrient-dense foods. Keep your head and feet particularly warm, as these are areas where cold easily enters. Consume warm soups and stews to maintain core body temperature.
