Why it suits you: Damp-Heat shows as a bitter taste, bad breath and sticky stools, and the muggy 'return of the south wind' lets heat build. Pea shoots clear heat and drain damp, tofu cools and moistens, and a clear, low-oil soup leaves the mouth feeling fresher.

Method

Prep 10 min · Cook 10 min
  1. 1Soak the shiitake until soft and slice, keeping the soaking water. Cook the noodles in boiling water until soft and divide between bowls.
  2. 2Simmer the soaking water, water, ginger and shiitake for 5 minutes, then add the tofu for 2 minutes.
  3. 3Add the pea shoots, turn off the heat as soon as it boils, season with salt and sesame oil and pour over the noodles.

The TCM view

Pea shoots are sweet, neutral and slightly cool, clearing heat and draining damp. Tofu is sweet and cool, clearing heat and generating fluids; shiitake is sweet and neutral and strengthens the spleen; ginger protects the stomach. Clearing without chilling.

Seasonal principle

As dampness increases, protecting the Spleen is crucial. Eat warm, easily digestible foods to prevent dampness from accumulating. Avoid raw and cold foods which can weaken the digestive fire. Engage in moderate exercise to help the body naturally expel excess moisture through light sweating.
