Why it suits you: Damp-Heat shows as oily skin, a bitter taste and breakouts, and Rain Water's muggy damp traps the heat even more. Job's tears and adzuki bean rice clears heat and drains damp, and the light celery and tofu stir-fry is filling without any meat.
Method
Prep 15 min · Cook 50 min- 1Soak the Job's tears and adzuki beans the night before (at least 4 hours), then drain.
- 2Put them in the rice cooker with the rinsed rice, add half a cup more water than usual and cook on the brown-rice setting.
- 3String the celery and slice it on the diagonal; cut the pressed tofu into strips and the carrot into thin sticks.
- 4Heat the oil and fry the garlic until fragrant. Fry the tofu until lightly golden on both sides, then add the carrot, celery and 2 tbsp water and stir-fry on high for 2 minutes.
- 5Season with the soy sauce and salt and take off the heat while the celery is still crisp. Serve with the rice.
Cautions
- Best to avoid Job's tears in pregnancy. If you get loose stools or feel the cold, use dry-roasted Job's tears instead.
Chef's tips
- Cook it the night before, pack the rice and stir-fry separately and refrigerate within an hour of cooling. Reheat until piping hot — the celery stays crunchy.
The TCM view
Job's tears are sweet, bland and cool, clearing heat and damp and strengthening the spleen; adzuki beans are sweet, sour and neutral and ease water retention; celery is sweet and cool, clearing heat and calming the liver; pressed tofu is sweet and cool and gives plant protein without grease. Clean and gently cooling — draining damp without upsetting the stomach.
